  1. Wash and cut the tomatoes in half. Be sure to remove the stem area. Place tomatoes on lightly oiled grill pan to save time, or use a propane grill to quickly roast both sides. This should take approximately 10-15 minutes.
  2. Let grilled tomatoes cool slightly and then add to a blender or food processor. Add the remaining ingredients and blend on high for 1 minute.
  3. Add salt and pepper to taste and serve with sliced bread and/or fresh veggies. Enjoy!
