- 4 large tomatoes grilled
- ¼ cup non-dairy milk (I normally use soy)
- 1 tablespoon sundried tomato paste
- 1 tablespoon extra virgin olive oil
- 2 cloves garlic

- Wash and cut the tomatoes in half. Be sure to remove the stem area. Place tomatoes on lightly oiled grill pan to save time, or use a propane grill to quickly roast both sides. This should take approximately 10-15 minutes.
- Let grilled tomatoes cool slightly and then add to a blender or food processor. Add the remaining ingredients and blend on high for 1 minute.
- Add salt and pepper to taste and serve with sliced bread and/or fresh veggies. Enjoy!
